Unlike the polished Gustavia branch, the Colombier flagship feels like a working atelier: you can watch bakers pulling trays from the ovens through the back, ceiling fans turning lazily, a chalkboard listing the day's tartes. Grab a paper-wrapped baguette still warm from the oven, snag a pain au chocolat before the surfers on the way to Anse des Flamands buy them out, and take your haul to eat under the sea grape trees down at Colombier Beach. It's the closest thing St Barth has to a village boulangerie, and once you've been, hotel-lobby pastries never quite measure up.
What to Try
Start with a classic baguette tradition and a flaky pain au chocolat, then branch into the tarte au citron or a slice of quiche for something more substantial.
